Happy Day of the Mexican Independence!
Is Tia Lencha here. Today we make a salsa that is the colors of the Mexican bandera (flag for you pochos).
Tia Lencha is all dress in her green, white, and red to celebrate El Grito, but all of her pocho and gringo friends is a little confuse. They are no in the streets today, wearing the big sombreros, fake bigotes (mustaches for you pochos), and drinking like pescados (fish for you pochos.)
This is the day for the Mexicans to celebrate 200 years free from Christopher Colombus and his amigos, and Indians turning on their own people, and diseases, and dying by the millions, and survive only to be treated like caca by the colonizers.
Thas a lot to celebrate if ju ask Tia Lencha.
Our amigo Napoleon Bonaparte was involve in our independence too. He decide to invade Spain in 1808 and put his brother José (who sounds Mexican if ju ask me) in charge of Spain. Thas when the Mexicans say, “Orale! Is time to kick the Spanish out of here!” And the Spanish say “Oh no.” And the Mexicans say “Oh yes.” And they did.
Speaking of asking Tia Lencha, a lot a people say, Tia Lencha can ju give me the recipe for pico de gallo? I say, which one? In my rancho, pico de gallo is a salad with cut up watermelon, orange, jicama, cucumber, and coconut with salt, chile and lime. But here in the north, pico de gallo is a fresh salsa.
So I going to teash you how to make what you pochos call pico de gallo to celebrate the Day of Independence. Are ju ready?
You get tomatoes, onions, and cilantro. If you can eat jalapeño, you get some too. You cut it. You put salt. You eat it with some tortilla ships.
Are ju tired from making this salsa? Have a cerveza (beer for you pochos), or a Michelada. If someone ask you what you are eating, ju tell them is salsa picada, which means chopped sauce, or salsa mexicana or salsa bandera (flag salsa), because the colors – red (tomato), white (onion), and green (cilantro and chiles) – are the colors of the Mexican flag.
